So living in Texas it is HOT right now. I’m talking really HOT! The last few days it has been raining and all I want is soup and pretend it is a nice cool fall day. So I decided to make a Disney World Copycat recipe. Well, I’m happy to say that this is the best soup I’ve ever eaten! That is not the pregnant taste buds talking either. My kids and husband loved it as much as I did!
Coconut Curry Chicken Soup from Disney’s Animal Kingdom
This chicken soup with coconut and curry may be the BEST soup you'll ever taste~
Serving
Ingredients
- 4 boneless, skinless chicken breasts, uncooked, cut into cubes
- 1 medium onion, diced chunky
- 1 red bell pepper, diced chunky
- 4 potatoes, diced chunky
- 14 ounces diced tomatoes, drained
- `1 cup coconut milk
- 3 Tablespoons curry powder
- 4 cups chicken stock
- ½ cup honey
- 4 Tablespoons olive oil
- ½ cup cilantro, chopped
- salt and pepper, to taste
Roux:
- 4 Tablespoons butter, melted
- 4 Tablespoons flour
Instructions
- Sprinkle chicken with salt, pepper, and 1 tablespoon curry powder. Sear chicken chuncks in the skillet until golden brown and ¾ done. Set aside.
- Melt butter and stir in flour to make a roux and set aside.
- Heat chicken stock, curry powder, coconut milk and roux. Let simmer until thickened.
- Add the vegetables (except the cilantro) and seared chicken. Cook until chicken is done.
- Add honey and garnish with cilantro and green onions. Add salt and pepper to taste.

looks good! but is the coconut milk the thinner kind in a big container from the refrigerated dairy section or the stuff that comes in a can? thanks!
I just made this tonight and I almost bought the refrigerator kind but realized it was probably the one from the asian food aisle in the can…right choice…def needed thickness of the canned coconut milk. But…directions leave out the directions for the olive oil?? Is it to sear the chicken? And…are the veggies added raw?
Sear chicken until it’s 3/4 done? Cook until check is done. I wish the directions were a little more detailed.

Can I throw this all in a crockpot? 4 hours fresh if with frozen chicken breast for 8 hours?

I realize this recipe is 2 years old… but I stumbled on it in my desperate search to find a recipe for Disneyland’s Thai Coconut Curry rice bowls. Any thoughts on how to convert this into more of a sauce? I have a craving that nothing will satisfy and a 10 hour drive with my 3 kids for a rice bowl just doesn’t seem right haha

How long do you need to cook the chicken and when do you use the oil? Lazy recipe.
The oil is used to sear the chicken and you just cook the soup until the chicken is cooked through. It should take about 10-15 minutes
