Southwest Pasta Bake Recipe

This Southwest Pasta Bake was a huge hit with the kids! It was full of flavor and made enough for 2 meals! You could also double the recipe, bake it, and stick it in the freezer for another day or for a friend!

  • 1 Pound of Ground Turkey
  • 3 cloves of garlic, peeled and minced
  • 1/2 of an onion
  • 1 box of Penne Pasta (I used whole wheat pasta)
  • 1 (16 oz) Jar of Salsa
  • 1 (8 oz) can of tomato paste
  • 1 (12 oz) can of tomato sauce
  • 2 cups of fresh spinach
  • 1 cup of corn
  • 1 cup of black beans, drained
  • 1/2 package of taco seasoning
  • 1 cup of Mozzarella Cheese


  1. Preheat the oven to 350 degrees.
  2. Heat a large skillet over medium heat. Add your ground turkey, garlic, and onion and cook until meat is browned and onions are soft.
  3. Cook your pasta per package instructions.
  4. When meat is done, add your salsa, tomato paste and tomato sauce to the meat mixture.
  5. Cook for a 2 minutes then add your spinach, corn, black beans and taco seasoning and cook for another 2 minutes.
  6. In a 9 by 13 pan, add your noodles and meat sauce and mix well.
  7. Bake for 20 minutes, sprinkle shredded mozzarella over top of the dish and continue baking for 5 more minutes.

  1. What a great looking recipe! I love that you used a healthier ground turkey versus ground beef. I am thinking that you could easily substitute some canned beans for the meat and make this a meatless dish the whole family will love! Cannot wait to try it!
