These little bars of goodness are perfect for those times when you told your mom that you would bring dessert to a family function, but totally forgot about it until shortly before it’s time to go and you don’t have any time to run to the store, so you have to look in your pantry and find something that you can make with the few ingredients that you have available . . . yep, these are totally perfect for times like that! Not that I would know or anything . . . 😉

Graham Cracker Crumb Bars Recipe
A great (and super quick) dessert bar recipe!

Ingredients
- 2 cups graham cracker crumbs
- 2 cups flaked coconut
- ¼ cup butter, melted
- 1 (14 ounce) can sweetened condensed milk
- 2 cups chocolate chips
Instructions
- Preheat the oven to 400 degrees. In a bowl, mix the graham cracker crumbs and coconut together. Pour in the milk and melted butter and mix together until it's completely incorporated. Spray an 8x8" pan with non-stick cooking spray and press the graham cracker mixture into the pan. Bake for about 10 minutes, then take the bars out of the oven and let cool.
- Put the chocolate chips in a microwave-safe bowl and microwave for 60 seconds. Stir, and microwave for 30-60 more seconds, or until all the chips are melted and the chocolate is smooth. Spread the chocolate over the bars, sprinkle a couple of graham cracker crumbs on top (if you want- completely optional- I just had a couple of crumbs left in the bottom of the bag, so I dumped them on top), and let cool. Cut into squares once the chocolate has hardened (you can put them in the fridge to speed up the process!).

This looks so delicious! I love graham cracker crumbs in almost any dessert, and the coconut makes it even better!
If you put the choco chips on top of the bars when they are hot and wait a few minutes they will be of spreadable consistancy. No need to dirty a bowl or use the microwave. Makes your easy recipe even easier.

Graham crackers are a highly underrated snack in my not-at-all-humble opinion. These sound so good!
Is there a substitute for the coconut? I’m not a huge fan of coconut when it comes to desserts. I’d like to possibly try a batch with coconut and another batch of a viable substitute for coconut just in case it is not popular among the masses 🙂 . Any suggestions would be greatly appreciated. We googled susbstitute for coconut and this is what it said….As coconut is usually part of the dry mix, you could replace it with an equal amount of the flour used in the recipe; unprocessed bran; oats; ground nuts or even chopped dried fruit.

Have you ever doubled this and made a 9×13? I wanted to try it for Christmas…
It should work. They will be a little bit thicker. Watch them closely and make sure they are cooked all the way through.
