Apple Coffee Cake

I’m a coffee cake lover – I swear I’ve been to Einstein Bagels more for their coffee cake than for their bagels! And when somebody gives you the all-clear to eat cake for breakfast, you just don’t say no to that! 😉 This coffee cake is super simple, but it’s a delicious treat for breakfast, brunch, or dessert!

  • 1 1/2 cups flour
  • 3/4 cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup butter, softened
  • 2 eggs
  • 3/4 cup milk
  • 2 cups apple pie filling (I used canned filling)
  • Topping:
  • 1/2 cup brown sugar
  • 3 tablespoons flour
  • 1 1/2 teaspoons cinnamon
  • 1 tablespoon butter


  1. Preheat oven to 350 degrees.
  2. In a small bowl, mix together all the topping ingredients and set aside.
  3. In a large bowl, mix together flour, sugar, baking powder, cinnamon and salt. Slowly add in butter, eggs and milk and mix until completely combined.
  4. In a greased 9x9" pan, pour half of the batter. Top the first half of the batter with the apple pie filling. Pour the remainder of the batter over the apple pie filling, then sprinkle with the topping mixture.
  5. Bake for 35-40 minutes, or until a toothpick inserted in the middle comes out clean.

    • Hi Sandy. We have only used the apple pie filling in this recipe. Total cooking time for this recipe is 35 minutes. I think regular apple slices would work, but they would need to be sliced very thin so they would cook all the way through and be as soft as apple pie filling apples. Hope this helps and let us know how it all turns out! Wish we had more words of wisdom for you! :)
