I’m a coffee cake lover. I swear I’ve been to Einstein Bagels more for their coffee cake than for their bagels. And when somebody gives you the all-clear to eat cake for breakfast, you just don’t say no to that.
This coffee cake is super simple, but it’s a delicious treat for breakfast, brunch, or dessert.
How to make Apple Coffee Cake
Step 1: Preheat oven to 350 degrees F.
Step 2: In a small bowl, combine together all the topping ingredients and set aside. This topping contains, brown sugar, flour, cinnamon and butter.
Step 3: In a large bowl, mix together flour, sugar, baking powder, cinnamon and salt. Slowly add in butter, eggs and milk and mix until completely combined.
The butter should be softened. It can be little melted, but yo don’t really want it melted. Recipe works best if the butter is just softened.
Step 4: In a greased 9×9″ pan, pour half of the batter.
Step 5: Top the first half of the batter with the apple pie filling. Pour the remainder of the batter over the apple pie filling.
Step 6: Sprinkle with the topping mixture.
Step 7: Bake for 35-40 minutes, or until a toothpick inserted in the middle comes out clean.
Step 8: Serve warm or at room temperature. We usually refrigerate our leftovers to keep the pie filling from dripping out or getting gross.
This will stay good in your fridge for about 2-3 days. We recommend making this right before guests arrive, rather than ahead of time. It tastes best fresh.
Could you make it with fresh apples?
Absolutely. We have made it with fresh apples before and have learned a few tricks.
This may take a little extra work, but it is worth it and almost even more delicious.
Step 1: Peel and core the apples.
Step 2: Slice the apples very thin. The thinner the better. You will almost want to see your finger through the apple with these slices. I would say about 1/10 of an inch, slices.
Step 3: In a bowl, combine the thin apple slices (about 2-3 apples), 2 tablespoons melted butter, 1/4 cup brown sugar and 1/2 teaspoon cinnamon. Toss until apples are coated.
Step 4: Place the covered apples in a pan and heat over medium high heat for about 5-6 minutes. Add about 2 tablespoons of water to the mixture and slowly mix in.
Step 5: Continue on with recipe and your fresh apple slices.
Drinks to have with your apple coffee cake
I know this is a coffee cake, but our family doesn’t drink coffee. However, we do love to drink this with milk, both white and chocolate, apple cider, hot chocolate, and even Diet Coke. Then again, everything goes with Diet Coke, am I right?

Ingredients
Topping:

Do you think you could use just regular sliced apples (maybe coated with cinnamon/sugar or would it be too dry?
Hi Sandy. We have only used the apple pie filling in this recipe. Total cooking time for this recipe is 35 minutes. I think regular apple slices would work, but they would need to be sliced very thin so they would cook all the way through and be as soft as apple pie filling apples. Hope this helps and let us know how it all turns out! Wish we had more words of wisdom for you! 🙂
