Back to school time is fast approaching!  While growing up we always had a fun breakfast on that first day back to school.  It helped calm our nerves and make the special day so exciting.   A few years ago our mom started making these delicious Cinnamon Breakfast Bites.  They actually have cereal in them – crushed rice krispies!  The crunchy sugar and cinnamon coating with a soft middle make them the perfect breakfast.  These breakfast bites taste a lot like a cinnamon sugar doughnut hole, but so much healthier since they are baked!   And just a little secret…..they are sooooo good served warm right out of the oven!  We love them with a big glass of milk and some fruit!

Looking for a great way to start your day? These breakfast bites are a quick and easy breakfast that your whole family will enjoy!
  • 1 1/3 cups flour
  • 1 cup rice krispies cereal, coarsely crushed
  • 2 tablespoons sugar
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup butter flavored shortening
  • 1/2 cup milk
  • 1 1/2 teaspoon cinnamon
  • 2/3 cup sugar
  • 1/3 cup butter, melted
  1. In a mixing bowl, combine the flour, crushed cereal, 2 tablespoons sugar, baking powder, and salt.
  2. Then cut in the shortening until mixture resembles coarse crumbs.
  3. Stir in milk just until moistened. (The mixture is kind of dry, but if it’s way too dry add an extra 1 teaspoon of milk so it’s all barely moistened.)
  4. Shape into 1 inch balls.
  5. In a small bowl combine the cinnamon and 2/3 cup sugar.
  6. Dip each ball into butter, then roll into cinnamon/sugar mixture.
  7. Arrange in a single layer in an 8 x 8 baking dish that has been lightly sprayed with non stick cooking spray.
  8. Bake at 420 degrees for 15 to 17 minutes.
  9. Makes 2 dozen breakfast bites.

Ham, Egg, and Cheese Breakfast Roll-Ups


I know that it’s Halloween, but the recipe that I am sharing today is perfect for any day of the year and any meal of the day. :)
I needed a quick breakfast the other morning and time was quickly running out . . . I knew that my kids would probably end up eating their meal in the car because we had to leave, so I wanted it to be something that wouldn’t be too messy and something that they could hold in their hands. Some of their favorite meals are wrapped in crescent rolls, so I thought that it might be yummy to roll up their breakfast in a crescent too. It ended up being a huge hit with the kids (and my husband)! They were kind of like a mini breakfast burrito, but perfect for little hands to hold.
The possibilities of filling ingredients are endless; feel free to add whatever your family likes- bacon, sausage, red pepper, green chiles, tomatoes . . . anything goes!

Ham, Egg, & Cheese Breakfast Roll-Ups
2 packages of 8 count refrigerated crescent rolls
1 cup cooked ham, cut into small pieces
1 cup shredded colby jack cheese
7 eggs, cooked and scrambled

Unroll crescents onto a large ungreased cookie sheet.
Place a spoonful of scrambled eggs, a couple pieces of ham, and a sprinkle of shredded cheese on the wide end of each unrolled crescent.
Roll up each crescent, starting at the wide end and ending at the narrow end of the crescent.
Bake at 375 degrees for 11-13 minutes, or until crescents are golden.
Optional: Serve with salsa for dipping.

Country Breakfast Casserole


Confession: Sometimes when I drop my husband off at work in the mornings, I stop and get myself a country breakfast burrito from Taco Time. Maybe it’s just laziness, but they just taste SO good! There’s just something about the combination of tater-tots and country gravy! I figured if the combo tastes great in a tortilla, I bet it would taste great as a hot breakfast casserole. I was right! This breakfast casserole is great for brinner, brunch, or any meal in between!

Country Breakfast Casserole:
1 16-0z package sausage
1 chopped green onion
2 cups shredded cheddar cheese
6 eggs, lightly beaten
1 cup water
1/2 cup milk
2 cups frozen tater tots
1 2.64-oz country gravy mix
6 slices of bread, cubed
2 tablespoons butter

Preheat oven to 325 degrees. Grease a 13×9 inch pan. Brown sausage in skillet and drain the fat. Combine sausage and green onion, and spread across the bottom. Top with shredded cheese. Mix together eggs, milk, water, and gravy mix and pour evenly over the pan. Arrange bread cubes and tater tots on top and drizzle melted butter over everything. Bake for 35-40 minutes.

Slow Cooker Sausage Breakfast Casserole

As I have mentioned before, one of our favorite meals is to have breakfast for dinner (a.k.a. “brinner”). I prepped this recipe one morning and the kids absolutely devoured for dinner. However, you could easily make this the night before, put it in your slow cooker and let it cook for 8 hours during the night, and wake up to an amazing breakfast! Have you ever cooked anything all night long? The hardest part is when you wake up in the night to the most amazing smell . . . you might not be able to wait until morning to enjoy it!

Slow Cooker Sausage Breakfast Casserole
1 (30 oz) package frozen shredded hash brown potatoes
1 lb ground sausage (I used Italian sausage), browned and drained
2 cups shredded cheddar cheese
1/2 cup shredded mozzarella cheese
1 onion, diced
1 green pepper, diced
1 red pepper, diced
12 eggs
1/2 cup milk
1/2 teaspoon salt
1/4 teaspoon ground black pepper

Spray a 6 quart slow cooker with non-stick cooking spray (you cannot make this recipe in a smaller crock pot because it won’t fit). Layer 1/2 of the potatoes on the bottom of slow cooker.
Top with half of the sausage, cheddar and mozzarella cheese, onions, green peppers, and red peppers. Repeat the layers again.
Beat eggs, milk, and salt and pepper in large bowl with a wire whisk until well blended. Pour egg mixture evenly over potato-sausage mixture.
Cook on low setting for 8 hours or on high setting for 4 hours or until eggs are set.
Top with green onions, salsa, tomatoes, mushrooms, avocado- whatever you like!
