2 Quart Baking Dish
- 2 cups Sweet Potatoes mashed
- 3 Tablespoons packed brown sugar
- 1 Tablespoon Butter melted
- 1 pound lean ground turkey breast
- ½ onion chopped
- 2 cloves garlic minced
- 2 cups frozen mixed vegetables thawed and drained
- 10.5 ounces cream of chicken soup 1 can
- ½ cup milk
- salt and pepper to taste
Preheat the oven to 400 degrees F.
Stir the sweet potatoes, brown sugar and margarine in a medium bowl.
Cook the turkey, onion, garlic, in a nonstick skillet over medium-high heat until the turkey is cooked through. Stir in the mixed vegetables, soup and milk.
Add salt and pepper to taste.
Spoon the turkey mixture into a 2-quart baking dish.
Spread the sweet potato mixture over the turkey mixture.
Bake for 15 minutes or until hot.
