Grilled Tilapia Tacos Recipe

- 1 pound tilapia (in an Easy for You Grilling Pack seasoned with sriracha)
- 1 cup red cabbage finely sliced
- 1 cup pico de gallo
- 12 white corn tortillas
- ¼ cup crumbled Cotija cheese for topping
Avocado Cilantro Dressing
- 5.3 ounces plain Greek yogurt 1 container
- ½ avocado
- ¼ cup cilantro
- 2 Tablespoons lime juice
- 2 Tablespoons milk
Grill (or bake) tilapia according to package directions. (For one pound of tilapia fillets, we grilled ours on medium-high heat for about 12 minutes.)
While tilapia is cooking, mix together ingredients for the avocado cilantro dressing in a high-power blender or food processor until smooth. You may need to add more milk to reach desired consistency. Set aside.
Remove tilapia from the grill and flake with a fork.
Distribute tilapia, cabbage, pico, and Cotija evenly over the tortillas.
Top with a drizzle of dressing, or use the dressing for dipping.
