  • 2 pounds  butternut squash (peeled, seeded, and cut into one-inch cubes)
  • 2 Tablespoons olive oil
  • 2 teaspoons minced garlic
  • salt and pepper to taste


  • Preheat oven to 400 degrees F.
  • Toss butternut squash with olive oil and garlic in a large bowl.
  • Season with salt and pepper, to taste.
  • Arrange coated squash on a baking sheet.
  • Roast for 25-30 minutes or until squash is tender and lightly browned.
