  • ½ Tablespoon olive oil
  • 8 ounces Artichoke Hearts chopped (1 jar)
  • ½ teaspoon garlic salt
  • 1 bag baby spinach
  • 4 ounces cream cheese
  • cups shredded Mozzarella cheese
  • ½ cup grated parmesan cheese
  • ¼ cup feta cheese crumbled
  • 8 flour tortillas


  • Heat olive oil in saucepan over medium heat.
  • Place chopped artichoke and garlic salt in pan and cook for 1 minute.
  • Add spinach and cook, stirring constantly until spinach has shrunk completely.
  • Add cream cheese, Mozzarella, Parmesan, and Feta cheese and stir until completely melted.
  • Spread 1/4 cup of mixture over one tortilla, and top with another tortilla.
  • If you'd like to make your tortillas more crispy, heat the quesadilla over medium heat in a skillet.
  • Cut, serve, and enjoy!
