Sandwich
- 2 Tablespoons olive oil
- 1 teaspoon minced garlic
- 1 red bell pepper sliced
- 1 cup sliced fresh mushrooms
- ½ red onion sliced
- 2 cups baby spinach leaves
- 4 flat breads
- 1 cucumber sliced
- 1 roma tomato sliced
- 2 Tablespoons Feta Cheese Crumbles
Sauce
- ½ cup plain Greek yogurt
- 2 Tablespoons mayonnaise
- 1 teaspoon hot sauce
- 1½ Tablespoons lemon juice
- 1 teaspoon minced garlic
Sandwich
Heat olive oil in a pan over medium-high heat.
Saute garlic, pepper, mushrooms, and onions until tender (about 8-12 minutes depending on how tender you like them).
Stir in spinach leaves until they darken and wilt.
Serve on flat bread topped with cucumber, tomato slices, and Feta cheese.
