Ingredients

Sandwich

  • 2 Tablespoons olive oil
  • 1 teaspoon minced garlic
  • 1 red bell pepper sliced
  • 1 cup sliced fresh mushrooms
  • ½ red onion sliced
  • 2 cups baby spinach leaves
  • 4 flat breads
  • 1 cucumber sliced
  • 1 roma tomato sliced
  • 2 Tablespoons Feta Cheese Crumbles

Sauce

  • ½ cup plain Greek yogurt
  • 2 Tablespoons mayonnaise
  • 1 teaspoon hot sauce
  • Tablespoons lemon juice
  • 1 teaspoon minced garlic

Instructions

Sandwich

  • Heat olive oil in a pan over medium-high heat.
  • Saute garlic, pepper, mushrooms, and onions until tender (about 8-12 minutes depending on how tender you like them).
  • Stir in spinach leaves until they darken and wilt.
  • Serve on flat bread topped with cucumber, tomato slices, and Feta cheese.

  • Whisk all ingredients together until well combined. Use
  • for dipping or drizzle on top.
