Pumpkin Spice Sandwich Cookie Recipe
You will love these homemade Pumpkin Spice Sandwich Cookies. They are super soft and loaded with pumpkin cream cheese frosting in the middle!

Ingredients
- 3/4 cup pumpkin puree
- 1/2 cup butter
- 2 eggs
- 1/3 cup milk
- 1/2 teaspoon vanilla
- 1 15.25 ounce spice cake mix
Frosting
- 2 Tablespoon butter
- 2 ounces cream cheese
- 1/4 cup pumpkin puree
- 1/4 teaspoon vanilla
- 1/4 teaspoon nutmeg
- 1/4 teaspoon ginger
- 1/2 teaspoon cinnamon
- 2 cups powdered sugar
Instructions
- Heat oven to 350 degrees.
- Line cookie sheet with parchment paper.
- Mix together pumpkin and butter until smooth.
- Blend in eggs, milk and vanilla.
- Slowly add in the cake mix and beat until all is blended well.
- Drop batter onto cookie sheets.
- Bake for 12 minutes.
- Remove from oven and let cool completely.
- Make frosting by mixing all ingredients together until well blended.
- Spread on the back side of a cookie, then top with the other cookie to sandwich them together.
