Ingredients

  • 3 Tablespoons sesame oil
  • ½ yellow onion chopped
  • 2 garlic cloves minced
  • 2 cups frozen peas and carrots
  • ½ cup broccoli chopped
  • cups cauliflower rice
  • 2 eggs
  • ¼ cup soy sauce

Instructions

  • In a large skillet, heat sesame oil over medium heat.
  • Add onion, garlic, peas and carrots, broccoli and cauliflower rice to skillet and cook until all vegetables are cooked through and tender (about 7-8 minutes).
  • Crack eggs into pan and scramble into vegetables.
  • Add soy sauce to the pan and stir until combined.
  • Top with more soy sauce if desired.

Notes

  • We like to serve this with a chicken, steak, or shrimp dish.
