Ingredients

  • 2 Tablespoons olive oil
  • 1 teaspoon minced garlic
  • 1 cup Italian breadcrumbs
  • cup grated parmesan cheese
  • salt and pepper, to taste
  • 6 boneless, skinless chicken breasts

Instructions

  • Preheat oven to 350 degrees F.
  • Lightly grease a 9 x 13 inch baking dish with nonstick cooking spray.
  • In a bowl, combine olive oil and garlic.
  • In a separate bowl, combine bread crumbs, Parmesan cheese, salt and pepper.
  • Dip each chicken breast in the oil mixture, then in bread crumb mixture.
  • Arrange the coated chicken breasts in the prepared baking dish, and top with any remaining bread crumb mixture.
  • Bake for 30 minutes, or until cooked through.
