Ingredients

  • 6 boneless, skinless chicken breasts
  • Jerk Seasoning
  • 2 Tablespoons red onion diced
  • 2 mangos diced
  • 2 Tablespoons cilantro diced
  • 2 Tablespoons lime juice
  • 3 cups cooked rice

Instructions

  • Season your chicken with jerk seasoning and grill until cooked through.
  • In a bowl combine the mangoes, red onion, cilantro, and lime juice; mix well.
  • When the chicken is done cooking, place the salsa over the cooked rice, then put the chicken on top.
