These Tropical Chocolate Coconut Blondies are the perfect dessert, for any luau or get together. They are so easy to make, and literally taste like you are on an island when you close your eyes and take a bite. You will love these.
Beat the butter and brown sugar until very creamy.
Add the eggs, extract, salt, and baking powder and beat again. Slowly beat in the flour until just combined.
Stir the coconut, m&m's, and chocolate chips in by hand.
Spread in a greased 9x13 pan and bake for 22-27 minutes (22 minutes if you like them gooey and a tiny bit undercooked . . . 27 minutes if you like them a little harder and fully cooked).
Let them cool completely before cutting and devouring. (I actually think these these taste better the next day!!).
Notes
You could replace rum extract with a different extract, and it would still taste absolutely delicious. Here are a few extracts we recommend replacing it with:
coconut extract
vanilla extract ( or imitation vanilla would also work)
