In the slow cooker combine onion, sweet potato, broccoli, carrots, canned corn, chicken broth, bacon, and seasonings.
Cook on high for 3 hours or on low for 5 hours, until potatoes are soft.
15 minutes before serving, in a small bowl combine milk and flour. Whisk until smooth.
Pour milk mixture into the slow cooker and stir.
Let simmer for 15 minutes to let milk thicken up.
Season with additional salt and pepper as desired.
Notes
To turn this into a freezer meal:In a gallon-sized freezer bag, combine onion, sweet potato, broccoli, carrots, canned corn, bacon, and seasonings. Squeeze out as much air as possible and seal bag closed. Place freezer bag into freezer and it will last 60-90 days. When ready to use, spray inside of slow cooker with non-stick cooking spray and dump ingredients from bag into slow cooker. Add 4 cups of chicken broth in with the frozen food. Place the lid on top and cook for 5-6 hours on low heat (you can also cook it for 3-4 hours on high heat, but I highly recommend low and slow!). Follow the rest of the instructions as written.
