I love a good soup recipe, but this Skinny Zuppa Toscana, took it above and beyond. It was so easy to make and full of flavor.

Ingredients
64ouncechicken broth
2largeRusset potatoes
1smallonion
2teaspoonsgarlic, minced
19½ouncesJennie-O Hot Italian Turkey Sausage
6slicesbacon, cooked
1cupkale, chopped
Instructions
Slice Potatoes into thin rounds.
In a large soup pot, heat chicken broth and potatoes over medium-high heat.
While the potatoes are heating, dice onion and heat onion, garlic, and turkey sausage in a large skillet until sausage is browned. Once browned, add the mixture to the potatoes and broth.
Add in crumbled bacon and let simmer for 10-15 minutes until the potatoes are soft.
Stir in chopped kale and serve.
Notes
Use ground turkey or sweet Italian sausage to make the soup less spicy
