Strawberry Spinach Salad with Homemade Poppy Seed Dressing Recipe

I love a good salad recipe, and this one is by far my favorite. It is so easy to make and full of flavor. The homemade poppyseed dressing is just the cherry on top. You will love this simple, light, and healthy salad.

Ingredients

  • 2 Tablespoons sesame seeds
  • 1 Tablespoon poppy seeds
  • cup sugar
  • ½ cup olive oil
  • ¼ cup white vinegar
  • ¼ teaspoon paprika
  • ¼ teaspoon Worcestershire sauce
  • pepper dash
  • 1 red onion divided
  • 10 ounces fresh spinach  (rinsed, dried and torn into bite-size pieces)
  • 1 quart strawberries washed and sliced
  • ¼ cup walnuts chopped
  • cup bacon bits
  • ¼ cup crumbled feta cheese

Instructions

  • In a blender, toss in the sesame seeds, poppy seeds, sugar, olive oil, vinegar, paprika, Worcestershire sauce, ground pepper and 1 Tablespoon diced red onion. Blend until the onion is pureed.
  • Pour the dressing into a bowl, cover, and chill for at least an hour.
  • In a large bowl, combine the spinach, strawberries, walnuts, bacon bits, red onion slices (left over from the red onion listed above) and feta cheese. Toss lightly.
  • Pour dressing over salad right before you are ready to eat it so that the spinach does not wilt.

Notes

*When strawberries are not in season, this salad is also so yummy when you substitute a can or two of mandarin oranges for the strawberries! It's also so good to throw in a grilled chicken breast and then it becomes a main dish. So many options . . . 🙂
