Ingredients

  • 1 pound lean ground beef
  • 1 onion diced
  • 3 pounds russet potatoes scrubbed and sliced into 1/4" coins (you can peel them if you want, but it's not necessary)
  • 1 teaspoon smoked paprika (if you don't have smoked, you can use regular paprika)
  • 1 teaspoon dried parsley
  • ½ teaspoon garlic powder
  • salt and pepper, to taste (I did about 1 teaspoon salt and 1/2 teaspoon black pepper)
  • 3 cup shredded sharp cheddar cheese
  • ½ cup beef broth

Instructions

  • In a skillet on the stove top, brown ground beef and onion over medium heat (add seasoning as desired to the meat - I usually just do some salt and pepper). Drain the grease from the pan, set aside.
  • In a small bowl, mix together smoked paprika, parsley, garlic powder, and salt and pepper. Set aside.
  • Spray the inside of the slow cooker with non-stick cooking spray for easier clean up.
  • Spread half of the potatoes in the bottom of the slow cooker. Top with half of the seasonings, then half of the ground beef mixture, then half of the cheese. Repeat layers in the same order again.
  • Pour the broth on top of everything.
  • Place the lid on top and cook for 4 hours on high (or 6-8 hours on low), making sure to not open the lid (every time you open a slow cooker lid, it releases enough heat that you need to add on about an extra 30 minutes of cooking time).
  • Serve topped with fresh parsley and more shredded cheese, if desired.

Notes

  • You can put raw beef in the slow cooker, but you will want to break it into little pieces first and then make sure that it’s fully cooked before consuming food. I have found that I prefer to cook it before adding it to the slow cooker because then I can drain the grease off of the meat.
