Ingredients

  • 1 cup quick cooking oats
  • ½ cup shredded coconut
  • ½ cup almond butter
  • ½ cup honey
  • ¼ cup vanilla protein powder
  • 1 teaspoon vanilla extract
  • ½ cup dried blueberries
  • ¼ cup slivered almonds

Instructions

  • Combine ingredients in a bowl and stir until well combined. We find this easiest in a Bosch or Kitchen Aid mixer.
  • Roll dough into 1? balls and place on a baking sheet. I covered my baking sheet with parchment paper, but this is optional.
  • Place in the freezer for about 1 hour, then store in a resealable bag or airtight container in the fridge for up to a week (or in the freezer for up to a month).
