Cinnamon Roll Sugar Cookie Bars Recipe

 I was sick of just making plain old cookies, and decided to give these Cinnamon Roll Sugar Cookie Bars a try! They were absolutely delicious, especially with the cream cheese frosting! It was hard to give a few away to my neighbors!

  • Medium Mixing Bowl (2)
  • Non-stick Cooking Spray
  • 9x13-inch Baking Pan
  • Hand mixer


  • cups all-purpose flour
  • 2 Tablespoons cornstarch
  • 1 Tablespoons cinnamon
  • teaspoons baking powder
  • ½ teaspoon salt
  • cup butter softened
  • cup brown sugar
  • cup sugar
  • 2 large eggs
  • 3 Tablespoons sour cream
  • ½ teaspoon vanilla extract

Cream Cheese Frosting

  • 6 ounces cream cheese softened
  • 6 Tablespoons butter softened
  • ½ teaspoon vanilla extract
  • 3 cups powdered sugar


  • Preheat oven to 350 degrees.
  • In a bowl, mix together flour, cornstarch, cinnamon, baking powder and salt.
  • In a separate bowl beat together, butter, brown sugar, sugar, eggs, sour cream, and vanilla extract.
  • Slowly add dry ingredient mix to butter and sugar mixture. Mix until just blended together, don't over mix!
  • Spread into a greased 9x13 pan (you might have to use your hands a little bit to make sure the dough gets into all the corners).
  • Bake for 18-20 minutes.


  • Using a mixer, beat together cream cheese, butter and vanilla.
  • Add in powdered sugar until desired consistency.
  • Wait until cool before spreading frosting. Sprinkle with cinnamon and sugar to top it off.
