red bell pepper

sliced fresh mushrooms

red onion

baby spinach leaves

plain Greek yogurt

Instructions
Sandwich
Heat olive oil in a pan over medium-high heat.
Saute garlic, pepper, mushrooms, and onions until tender (about 8-12 minutes depending on how tender you like them).
Stir in spinach leaves until they darken and wilt.
Serve on flat bread topped with cucumber, tomato slices, and Feta cheese.
Sauce
Whisk all ingredients together until well combined. Use
for dipping or drizzle on top.
