Cook tortellini according to package directions and let it cool.
Combine tortellini, dressing, pepper, olives, artichokes and Mozzarella. Stir until everything is coated with dressing.
Top with Parmesan Cheese.
Refrigerate at least two hours (or overnight). Serve cold.

This is a great basis for a salad. But what is nice is that really with salad you can do any and all the things you like and that you think will taste good! Here are a few suggestions of ingredients to make the perfect side dish when it comes to a salad: red onion, olive oil, bell peppers, fresh herbs (such as dill, basil, and rosemary), green onion, red wine vinegar, chopped banana peppers, and cherry tomatoes. Basically any cooked pasta (for a cold pasta salad) and all of the fresh veggies you want!
