Wash and peel your apples, then slice and set them aside.
Combine water, brown sugar, cornstarch, lemon juice, vanilla extract, apple pie spice, and salt in a saucepot.
Add the sliced apples and bring to a simmer. Cook 4-5 minutes. Set aside.
Prepare the topping:
Preheat your oven to 350℉. Lightly grease your 9x13-inch baking dish. Transfer the cooked apples to the baking dish.
Make the topping by combining flour, sugar, and baking powder in a bowl. Add milk and melted butter. Stir until just combined.
Spread the topping over the apples.
Baking time:
Bake the apple cobbler for 40-45 minutes or until the top is golden brown.
Cool before serving.
Notes
For a more intense apple flavor, you can use apple juice instead of water when cooking the apples. If you are using sweetened apple juice, reduce the sugar accordingly.
