In a large bowl, toss potatoes with oil and all seasonings.
Place potatoes in air fryer basket. Put the basket into the inner pot, place the air fryer lid on top.
Set the temperature to 400℉ for 10 minutes.
Remove lid, shake basket and stir potatoes. Continue to cook potatoes until they are golden and tender (about 7-8 more minutes).
Remove and top with additional salt and pepper if desired. Serve and enjoy!
Notes
Place potatoes in a single layer to get them the crispiest.
I use yellow potatoes, but any kind of potato will work.
Season potatoes generously. I use onion powder and garlic powder. Sometimes, I will add fresh rosemary, Italian seasoning, or cajun seasoning. You can also cut up fresh garlic cloves, and add them to the potatoes before roasting. Fresh herbs can be added after you air fried the potatoes.
Try to cut the potato pieces evenly, so they cook the same.
If you have leftover potatoes, you can store them in an airtight storage container in the refrigerator for 1 to 2 days. Reheat them in the air fryer on the next day.
A little bit of oil goes a long way.
