Skillet Ranch Chicken Recipe

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 Tablespoon dry ranch dressing mix
  • 2 Tablespoons Buttermilk Kodiak Cakes Pancake Mix
  • 2 Tablespoons butter

Instructions

  • Between two sheets of parchment paper, pound chicken using a meat tenderizer or kitchen hammer into 1/2" breasts.
  • In a bowl, combine ranch mix and pancake mix.
  • Dip each chicken breast into the dry mix and cover well on both sides.
  • Heat skillet over medium heat and melt butter.
  • Once butter is melted, place chicken in skillet and cover.
  • Cook for 4 minutes, flip your chicken, and cook for an additional 4 minutes on the other side.

Notes

  • Serve over rice of quinoa.
  • If you don’t like ranch, we’ve also made this chicken using lemon pepper and finishing off the cooking process with some fresh lemon slices, it was AMAZING.
