  • pounds boneless, skinless chicken breasts
  • Tablespoons olive oil
  • teaspoons salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • ½ Tablespoon dried oregano
  • ½ Tablespoon dried thyme

Instructions

  • Preheat the oven to 425 degrees F and line a baking tray with aluminum foil.
  • Cover the chicken with plastic wrap and, using a rolling pin, pound the breasts so they are all the same thickness.
  • In a mixing bowl, drizzle the chicken with olive oil and sprinkle with salt, pepper, garlic powder, oregano, and thyme. Toss to coat the chicken evenly.
  • Arrange the chicken on the prepared baking sheet and bake for 18 minutes or until a meat thermometer inserted into the center of the largest breasts reads 165 degrees F.
  • Allow the chicken to rest for 5 minutes outside of the oven before slicing and serving.

Notes

When you use a mallet, it helps even thickness of the thickest part of the chicken. allowing cooking chicken breast perfectly and avoiding dry chicken breast. 
By making sure that the size of your chicken breasts is about the same, you can cook the chicken at high temperature without losing the natural juices of the chicken breast. At a lower temperature, the chicken will dry out.
