Ingredients

Pork Chops

  • 4 bone-in pork chops
  • 1 teaspoon sea salt
  • ½ teaspoon ground black pepper
  • 2 Tablespoons avocado oil (optional for searing)
  • 1 medium onion
  • 2 garlic cloves
  • 1 Tablespoon dried oregano
  • 2 Tablespoons butter melted
  • 1 cup chicken stock

Gravy

  • 3 Tablespoons salted butter
  • Tablespoons all-purpose flour
  • 1 cup milk
  • 2 cups cooking juices from slow cooker pork chops
  • a pinch of sea salt
  • a pinch of ground black pepper

Instructions

Pork Chops

  • Season the pork chops on both sides with sea salt and ground black pepper.
  • OPTIONAL SEAR: Heat 2 tablespoons of avocado oil in a heavy-bottomed skillet over medium-high heat. Sear the pork chops for 2 minutes on either side.
  • Place the seasoned pork chops in the bowl of a slow cooker.
  • Add the onion, garlic, dried oregano, butter, and chicken stock. Mix to combine.
  • Cook on high for 4 hours. If you can, open the slow cooker every hour and spoon juices over the pork chops.

Gravy

  • Heat a skillet to medium heat.
  • Add the butter to the skillet and melt.
  • Add the flour and whisk. Cook for ~1 minute (or until golden brown), whisking continually.
  • Add the milk gradually, whisking continuously until homogenous.
  • ½ cup at a time, add the cooking juice to the skillet, whisking continuously.
  • Season with sea salt and ground black pepper
  • Continue to cook for 5-7 minutes or until thickened and golden brown; whisking continuously all the while.
  • Pour the gravy over the slow cooker pork chops to serve.

Notes

  • Searing the pork chops is totally optional, but we love the extra flavor it gives. If you have time for this step definitely give it a try!
