Season the pork chops on both sides with sea salt and ground black pepper.
OPTIONAL SEAR: Heat 2 tablespoons of avocado oil in a heavy-bottomed skillet over medium-high heat. Sear the pork chops for 2 minutes on either side.
Place the seasoned pork chops in the bowl of a slow cooker.
Add the onion, garlic, dried oregano, butter, and chicken stock. Mix to combine.
Cook on high for 4 hours. If you can, open the slow cooker every hour and spoon juices over the pork chops.
Gravy Instructions
Heat a skillet to medium heat. Add the butter to the skillet and melt.
Add the flour and whisk. Cook for ~1 minute (or until golden brown), whisking continually.
Add the milk gradually, whisking continuously until homogenous. ½ cup at a time, add the cooking juice to the skillet, whisking continuously.
Season with sea salt and ground black pepper. Continue to cook for 5-7 minutes or until thickened and golden brown; whisking continuously all the while.
Pour the gravy over the slow cooker pork chops to serve.
Notes
Searing the pork chops is totally optional, but we love the extra flavor it gives. If you have time for this step definitely give it a try!
