- 1 ½ cups quick oats
- ½ cup pumpkin puree
- ½ cup natural peanut butter
- ⅓ cup honey
- ¼ teaspoon cinnamon
- ¼ teaspoon pumpkin pie spice
- 1 teaspoon vanilla
- 2 Tablespoons ground Flax seeds
- ¼ cup vanilla protein powder optional
- ¼ cup mini semi sweet chocolate chips optional
In a large bowl, combine all ingredients.
Roll dough into 1" balls and place on a baking sheet.
Place in the freezer for about 1 hour, then store in a resealable bag or airtight container in the fridge for up to a week (or in the freezer for up to a month).
