Cut everything as needed: cut the steak into bite-size pieces. Peel the potatoes and cut into small cubes. Slice the onion and cut the bell peep into bite-size pieces. Halve the cherry tomatoes and peel and slice the avocado.
Cook the meat:
Cook the meat: Heat olive oil in a large skillet over medium-high heat. Add the beef, season it to taste with salt and pepper, and cook for 4-5 minutes per side. Remove the meat from the skillet and set aside.
Cook the vegetables:
Cook the potatoes: add potatoes into the same skillet. Season the potatoes to taste with salt and pepper. Cook the potatoes, stirring for 10-12 minutes or until tender.
Add onions and red bell pepper. Cook, stirring for 8 minutes.
Place the steak back into the skillet and stir to combine.
Add the eggs:
Cook the eggs: make 4 wells in the meat-potato mixture. Crack eggs into each well. Scatter the cherry potatoes over the meat and close the skillet with a lid. Cook the eggs for 8-10 minutes or until doneness is reached.
Add the avocado:
Add the avocado: remove the lid from the skillet. Add the sliced avocado.
Serve:
Season the dish to taste and serve warm.
Notes
For some heat, add 1 chili pepper to your dish. Cook it with the onions.
