I love a good potato casserole, but a lot of the time, they are filled with gross ingredients, that you can't think about as you eat them. This Skinny Potato Casserole is a much healthier twist and still tastes absolutely amazing.
Combine all ingredients into a large bowl. Grease a 9 X 13 glass or ceramic baking pan with cooking spray. Pour potato mixture into baking pan and spread evenly. Bake uncovered for 55 min.

This dish is delicious as is, however, I like to add a little ranch seasoning mix to give it just a little extra flavor. It is so yummy with a little kick of ranch seasoning mix.
