Reese's Peanut Butter Cup Cake Recipe

This Reese's Peanut Butter Cup Cake is so simple and full of chocolatey peanut butter flavor. It comes together in minutes, and is great for feeding a crowd. If you know a Reese's peanut butter cup fan, you need to send them this recipe.

Ingredients

Cake

  • 15.25 ounces Devil's Food Cake Mix, 1 package
  • 1¼ cups water
  • ½ cup vegetable oil
  • 3 eggs

Peanut Butter Buttercream Frosting

  • 1 cup powdered sugar
  • 1 cup peanut butter (creamy)
  • 5 Tablespoons butter, room temperature
  • ¾ teaspoon vanilla
  • ¼ teaspoon salt
  • ⅓ cup heavy cream
  • 20 ounces Reese's Mini Peanut Butter Cups, 1 package, divided

Cake

  • Prepare cake as directed on box using two 9" cake pans.  Let cool.
  • While cake is cooking, unwrap the mini Reese's peanut butter cups.
  • With half of the peanut butter cups, cut them into quarters. Set aside.
  • With the other half of the peanut butter cups, cut in half. Set aside.

Peanut Butter Buttercream Frosting

  • In a large mixing bowl combine the powdered sugar, peanut butter, butter, vanilla, and salt in a bowl.
  • Mix with an electric mixer on medium-low speed until creamy, scraping down the bowl with a rubber spatula as you work.
  • Add the heavy cream and beat on high speed until the mixture is light and smooth.

Cake Assembly

  • To assemble the cake, place one cake layer on the serving plate.
  • Spread 1/3 of the peanut butter frosting on top of the cake layer. 
  • Sprinkle with 1/2 of the quartered peanut butter cups
  • Place the second cake layer on top of the frosting. Frost the top and outside of the cake with remaining peanut butter frosting.
  • Spread out the other half of the quartered cups on top of the cake.
  • With the halved peanut butter cups, decorate the top edge of the cake and if you have extra you could decorate around the bottom edge of the cake.

Notes

  • I am all about chocolate, however, you could easily switch out the chocolate cake mix for a vanilla or white.
