Tropical Chocolate Coconut Blondies Recipe

Non-stick Cooking Spray
- 2 cups brown sugar
- 2 eggs
- 1 stick of butter softened
- 2 Tablespoons milk
- 2 cups flour
- 1 teaspoon salt
- 2 teaspoons baking powder
- 2 teaspoons rum extract
- ¾ cup shredded coconut
- 2 cups chocolate chips
- 5 bags coconut m&m's 1.5 ounce bags
Preheat oven to 350 degrees.
Beat the butter and brown sugar until very creamy.
Add the eggs, extract, salt, and baking powder and beat again. Slowly beat in the flour until just combined.
Stir the coconut, m&m's, and chocolate chips in by hand.
Spread in a greased 9x13 pan and bake for 22-27 minutes (22 minutes if you like them gooey and a tiny bit undercooked . . . 27 minutes if you like them a little harder and fully cooked).
Let them cool completely before cutting and devouring. (I actually think these these taste better the next day!!).
You could replace rum extract with a different extract, and it would still taste absolutely delicious. Here are a few extracts we recommend replacing it with:

- vanilla extract ( or imitation vanilla would also work)
- almond extract
