I love Thanksgiving leftovers even more, because I get to make these amazing and delicious Cranberry Turkey Salad Sandwiches. They are so easy to make and taste absolutely amazing. You are going to love these.

Ingredients

  • 2 cups cooked turkey shredded
  • 6 green onions finely diced
  • 3 celery stalks chopped
  • 3 Tablespoons mayonnaise
  • ½ cup dried cranberries
  • ½ cup candied pecans
  • salt and pepper to taste
  • 8 slices whole wheat bread

Instructions

  • In a bowl, place in shredded turkey.
  • Add your onion, celery, and mayonnaise.
  • Mix to combine then fold in dried cranberries and pecans.
  • Place in an airtight container until you are ready to eat.
  • Serve on 8 slices whole wheat bread

Notes

  • If you don’t love turkey, you could easily switch it out for chicken. I like to purchase rotisserie chicken, and shred it, or I have even used canned chicken with this recipe.
