OPEN-FACED TUNA MELTS RECIPE

These easy sandwiches are my go-to when I need a quick lunch or dinner. I feel good about feeding it to my family because it's loaded with protein and it's items that I usually have on hand.

Ingredients

  • ¾ cup light mayonnaise
  • ½ green bell pepper diced
  • 2 Tablespoons onion diced
  • 1 stalk celery diced
  • 1 Tablespoon yellow mustard
  • ½ teaspoon Worcestershire sauce
  • 3 cans tuna drained
  • 6 slices bread toasted
  • 3 tomatoes sliced
  • 6 Tablespoons shredded cheddar cheese

Instructions

  • Heat oven to broil.
  • In a small bowl combine the mayonnaise, green pepper, onion, celery, mustard, and Worcestershire sauce.
  • Then stir in tuna.
  • Spread over each piece of bread; top with a tomato slices. Sprinkle with cheese.
  • Place bread on a baking sheet. Broil 3-4 inches from the heat for 2 minutes or until lightly browned and cheese is melted.
