- 1 cup sugar
- 1 cup brown sugar
- 1/2 cup butter
- 1/2 cup half and half
- 1/2 teaspoon ginger
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 cup pumpkin puree
- 1 cup Jet-Puffed Pumpkin Spice Mallows
- 1 cup Jet-Puffed Miniature Marshmallows
- 2 cups white chocolate chips
- 1 teaspoon vanilla
In a large saucepan over medium heat, mix together sugars, butter, half and half, spices and pumpkin puree.
Stir constantly and bring it to a boil (it should take about 7 minutes).
Reduce heat to low and continue to cook mixture for 7-10 minutes, stirring occasionally (it should start to thicken and all sugars will be dissolved).
Remove from heat, and add in marshmallows, chocolate chips, and vanilla.
Pour into a 9x9" pan that has been lined with foil and generously sprayed with cooking spray.
Let it cool completely and then serve.
