Creamy Buffalo Chicken Casserole Recipe
I love a good buffalo chicken recipe, but this Creamy Buffalo Chicken Casserole, takes my tastebuds to a whole new level. It's not too spicy, and perfect for sensitive pallets.

- 4 boneless, skinless chicken breasts cooked and shredded
- ½ cup buffalo sauce
- ¾ cup plain greek yogurt
- ½ cup ranch dressing
- ½ cup cream of chicken soup
- ½ teaspoon garlic salt
- ½ teaspoon paprika
- ½ cup Italian bread crumbs
- 1½ cup mozzarella cheese
- 5 cups cooked white rice
- ½ teaspoon ground black pepper
Preheat oven to 350 degrees.
In a large bowl, combine the chicken, buffalo sauce, plain Greek yogurt, ranch dressing, cream of chicken soup, garlic salt, and paprika, and mix until well combined.
Spray a 9x9 or 13x9 inch pan with non stick cooking spray.
Spread the mixture out, in the greased pan.
Sprinkle on the Italian bread crumbs, and top with the mozzarella cheese.
Place in the oven and bake for 20-25 minutes.
Then turn the oven off, and the broiler on high and broil for 2 minutes until the cheese is golden and gets a little crunchy on top.
Remove from oven and serve over white rice, and garnish with a pinch of black pepper
