Ingredients

  • 2 heads fresh broccoli roughly chopped
  • 2 apples diced
  • ¼ cup sweet onion diced
  • ½ cup low sugar craisins
  • 2 Tablespoons sugar
  • 6 Tablespoons apple cider vinegar
  • 2 Tablespoons Dijon Mustard
  • 1 Tablespoon canola oil
  • ½ teaspoon fresh ground black pepper
  • salt, to taste

Instructions

  • In a large bowl, add broccoli, apples, onion, and Craisins. Gently mix together.
  • In a medium bowl, combine remaining ingredients.
  • Fold dressing into broccoli mixture until broccoli is completely covered.
  • Cover the bowl and chill in the fridge for at least 2 hours before serving to let the flavors meld together.
  • You could also make this dish the day before.
