Barbecue Chicken Salad Recipe
This Barbecue Chicken Salad is quick, simple, healthy, and absolutely delicious. If you need a quick and healthy dinner, this is a recipe I highly recommend.
- 6 cups romaine lettuce
- 3-4 boneless, skinless chicken breasts cooked and shredded
- ½ red onion diced
- ½ cup shredded Mozzarella cheese
- 1 avocado diced
- 1 (15 ounce) can black beans rinsed and drained
- 1 (15.25 ounce) can corn drained
- 1 cup BBQ Sauce
- ⅓ cup ranch dressing
In a large bowl add lettuce, chicken, red onion, mozzarella cheese, avocado, black beans, and corn.
Drizzle the ranch dressing and barbecue sauce over the salad and stir until the dressing is fully incorporated and mixed in. (you can also but a little on top for looks and extra flavor).
Keep refrigerated until ready to serve.
