Spinach Cucumber Strawberry Salad Recipe
Nothing tastes better than the combination of spinach, cucumbers, and strawberries, unless of course it's topped with a homemade vinaigrette.
- 5 cups spinach chopped
- 1½ cups fresh strawberries chopped
- 3 cucumbers sliced
- ⅓ cup pecans chopped
- ¼ cup crumbled feta cheese
- ⅓ cup olive oil extra virgin
- ⅓ cup balsamic vinegar
- ½ teaspoon garlic crushed
- 1 teaspoon ground mustard
- ¼ teaspoon salt
- ⅛ teaspoon pepper
Toss together spinach, strawberries, cucumbers, pecans, and feta cheese.
In a small blender, blend together dressing ingredients.
Pour desired amount of dressing over salad and toss.
Chill in the fridge until ready to serve.
