This Broccoli Alfredo Spaghetti is a creamy alfredo sauce served over pasta and broccoli and topped with crushed croutons and red pepper flakes. This easy dinner recipe can be made in less than 30 minutes!

Equipment

  • large stock pot
  • Large Saucepan

Ingredients

  • 16 ounces linguine
  • 3 cups broccoli florets
  • 15 ounces Cannellini beans (1 can - rinsed and drained)
  • 15 ounces light alfredo sauce 1 jar
  • ½ cups croutons crushed
  • ¼ teaspoon red pepper flakes

Instructions

  • Cook pasta according to package directions, adding broccoli the last 3 minutes of cooking.
  • Reserve 1/2 cup of pasta water before draining.
  • Drain pasta and broccoli and set aside.
  • Combine beans, alfredo sauce and reserved pasta water in a blender and blend until smooth.
  • Pour sauce in a saucepan over medium heat, stirring frequently until heated through.
  • Serve sauce over pasta and broccoli.
  • Top with crushed croutons and red pepper flakes, if desired.

Notes

You could easily substitute the linguine or spaghetti noodles in this recipe for other pasta.
