  • 2 cups vanilla wafers crushed
  • 6 Tablespoons butter melted
  • 2 (8 ounce) cream cheese softened
  • 5 Tablespoons lemon juice
  • 1 Tablespoon lemon zest
  • 2 eggs
  • 2 cups white chocolate chips
  • 1 cup sweetened flaked coconut
  • ½ cup macadamia nuts chopped


  • Preheat oven to 350 degrees.
  • Completely combine vanilla wafers and butter in a small bowl. Press mixture into the bottom of a greased 9x13" pan.
  • In a medium bowl, beat together cream cheese, lemon juice and eggs until smooth. Pour this mixture over vanilla wafer mixture in the 9x13" pan.
  • Top the layers in the pan with white chocolate chips, coconut, and macadamia nuts - then press them down firmly in the pan.
  • Bake for 25-30 minutes or until lightly browned. Cover and refrigerate until ready to serve.
