  • 2 boneless skinless chicken breasts cooked and shredded
  • 1 avocado diced
  • ¼ cup cilantro chopped
  • salt and pepper to taste
  • 4 ciabatta rolls


  • In a medium mixing bowl combine the shredded chicken, diced avocado, cilantro, and salt and pepper to taste.
  • Stir together well. The avocado will mash up a little and that is fine.
  • Serve on Ciabatta rolls.
