Slow Cooker Roast Beef and Vegetables Recipe
This Slow Cooker Roast Beef and Vegetables only takes a few minutes to make but tastes like you spent all day in the kitchen!
Servings: 6 people
- 3 pound beef roast
- 3 stalks celery diced
- 2 cups baby carrots
- 1 onion sliced
- 2 cups beef stock
- 1 (2 ounce) packet onion soup mix
- 1 (1 ounce) packet au jus mix
Place roast in a slow cooker sprayed with nonstick cooking spray.
Sprinkle celery, carrots and onions on top of roast.
In a small mixing bowl, whisk together beef stock, onion soup mix, and Au Jus mix.
Pour over roast and vegetables.
Cover slow cooker and cook on low for 8-10 hours.
