Ingredients

  • 6 boneless, skinless chicken breasts
  • cup olive oil
  • 1 Tablespoon minced garlic
  • ½ cup dry plain bread crumbs
  • ½ cup grated Parmesan cheese
  • ½ teaspoon dried Italian seasoning
  • cup shredded Parmesan cheese

Instructions

  • Preheat oven to 400 degrees F.
  • Line a 9 x 13 inch baking pan with aluminum foil and lightly spray with nonstick cooking spray.
  • In a small bowl, mix together the olive oil and garlic.
  • In another bowl, combine the bread crumbs, grated Parmesan cheese and Italian seasoning.
  • Dip each chicken breast first in the olive oil, then in the bread crumb mixture.
  • Place breaded chicken on the prepared pan and sprinkle shredded Parmesan cheese over each chicken breast.
  • Bake for 35-40 minutes, or until chicken is completely cooked and reaches an internal temperature of 165 degrees F.
