Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter at room temperature
  • 1 teaspoon lemon zest
  • ½ cup milk
  • cup Truvia sweetener
  • 2 large eggs
  • 2 teaspoons poppy seeds

Instructions

  • Preheat oven to 375 degrees. Place 12 cupcake liners in a 12-cup muffin tin. Set aside. 
  • In a large bowl, cream together butter, lemon zest, milk and Truvia until light and fluffy. Beat in eggs, one at a time. Stir in poppy seeds.
  • Mix in flour, baking powder and salt until just combined, making sure to not over-mix the batter. Divide the batter evenly into the muffin tins and sprinkle with additional Truvia. 
  • Bake for 25 minutes or until golden brown.
