Home Run Baseball Cupcakes Recipe (and a cake mix secret!)

Equipment

  • Large Mixing Bowl
  • Microwave Safe Bowl
  • Cupcake Liners

Ingredients

  • 1 box cake mix (any flavor will work)
  • 3 large eggs
  • ½ cup butter melted, (not margarine)
  • 1 cup water

Instructions

  • Melt the butter in the microwave.
  • Add cake mix (do not add the ingredients as called for on the box!), eggs, and water to the butter in a large bowl.
  • Mix on low for one minute, then on high for one minute. The batter will be thick and creamy (instead of runny).
  • Scoop batter into cupcake papers (I used an ice cream scoop- you want them to be about 2/3 full). Bake at 350 degrees for 20 minutes. Cool and then frost.
