I love any kind of salsa, but I especially love this 5 Minute Black Bean and Corn Salsa. It comes together in a matter of minutes and tastes amazing on just about anything.

Ingredients

  • 1 can black beans rinsed and drained
  • 1 can corn drained
  • 1 can black olives drained
  • 1 bunch green onions diced
  • 1 bunch fresh cilantro chopped
  • 2 tomatoes diced
  • 2 avocados diced

Sauce:

  • ¼ cup red wine vinegar
  • ¼ cup olive oil
  • 1 teaspoon cumin
  • ¾ teaspoon salt
  • teaspoon pepper
  • 2 cloves garlic minced

Instructions

  • Prepare the sauce by mixing all the sauce items together. Add remaining ingredients to the sauce and mix well. Refrigerate until ready to eat. The longer this sits, the more it soaks up the sauce, making it even better!

Notes

* If you are looking to add more heat, we recommend adding a few jalapeño peppers.
